Hillbilly, or Flame, tomatoes are large heirloom cultivars. The fruits are 1-2 pounds, round, heavily ribbed, and have brilliant yellow to orange skin with red marbling. They are juicy and have a rich, sweet flavor that is low in acid. They are usually eaten raw - sliced or added to sandwiches. For larger yield and improved plant health, prune and stake tomatoes.
